Healthy Vegan Stew
Ingredients for the Stew:
2 Cups of baby potatoes (Any kind)
2 Cans Canellini or Great Northern Beans
6 Large Carrots (Chopped)
4 Celery Stalks (Chopped)
6 Cloves of Garlic (Minced)
1 Large Yellow Onion (Chopped)
4 Cups of vegetable stock
1 Tsp Paprika
4 Tbsp Onion Powder
1 Tsp of Parsley
1 Tbsp of Thyme
Instructions:
1.) In about 1/4 cup of vegetable broth, add chopped onion and minced garlic, Sauté for about 5 mins.
2.) Add Carrots and Celery and gently fry on a lower heat until softened
3.) Add all remaining stew ingredients except corn starch. Bring to a boil and simmer for 15 mins.
4.) Mix 2 Tbs of corn starch in 2 Tbs of water, Add to the stew and stir well.
5.) Continue to stir for 15-20 mins until all vegetables have softened, serve with fresh thyme.
