My Favorite Easy Healthy Vegan Stir Fry

My Favorite Easy Healthy Vegan Stir Fry

Ingredients:

4 – 14.04oz (408.2g) bags of Birds Eye’s Broccoli Stir Fry Mix (Broccoli, shredded carrots, mushrooms, bell peppers, water chestnuts, celery)

3 Tablespoons of Potato Starch + 3 Tablespoons of water (for the slurry)

1/4 cup of Liquid Aminos (Soy Sauce/Tamari)

1 Head of Garlic

1 block of Extra Firm Tofu (optional)

Fresh Green Onion/Scallions for garnishing

Red Chili Flakes for Garnishing

2 cups of brown rice + 2 cups of water

Instructions:

1.) Press Tofu if you’re choosing to add tofu. 2.)Pour your 4 bags of frozen veggies into a large deep pan. Cover with a lid and cook on a medium flame.

3.) While cooking, mince a head of garlic, throw it in the pan.

4.) Chop your tofu into small squares & Air fry your tofu for about 20min at 430 degrees Fahrenheit.

5.) Make your potato starch slurry by adding potato starch and water, and mixing until completely thinned out.

6.) Once thinned, add liquid aminos and your slurry to the stir fry. Mix well and cover.

7.) While cooking, make your rice. In a large microwaveable safe bowl, add 2 cups of rice with 2 cups of water, cover with a lid and cook for 7 mins. (Times may vary per microwave)

8.) Once tofu is slightly golden, add to stir fry, mix.

9.) Either mix your rice into the stir fry or serve the stir fry over a bed of rice. Top with chopped green onion, red chili flakes, or even sesame seeds, and enjoy!

NOTES:

*If you can’t find Birds Eye’s Broccoli Stir Fry Mix, feel free to just add in vegetables as you please. I’ve listed the vegetables included in the bag above.

*If you don’t have potato starch, feel free to use corn starch! (You may need less)

*Feel free to throw all your rice directly into the stir fry and mix it in! I like it this way 😋
