Healthy Vegan Chewy Chocolate Chip Cookies

Healthy Vegan Chewy Chocolate Chip Cookies (Made with Molasses!)

Dry Ingredients: 

1 Tablespoon of Ground Flaxseed (optional)

1 Teaspoon of Baking Soda 

1 Teaspoon of Baking Powder 

1/2 Cup of Almond Flour 

1/2 Cup of Sprouted Wheat Flour 

1/4 Cup of Oat Flour

1/2 Cup of Dairy-free Chocolate Chips

Wet Ingredients:

1/4 cup of Almond or other nut butter 

1 Teaspoon of Apple Cider Vinegar (Unpasteurized)

1 Teaspoon of Vanilla Extract 

1/3 Cup of Molasses 

1/4 Cup of Apple Sauce 

Instructions:

1.) Preheat your oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper. 

2.) In a large mixing bowl, add all dry ingredients. If you do not have all flours feel free to substitute (I.e. half almond flour, oat flour). 

3.) Add in wet ingredients, Fold in until mixed thoroughly. 

4.) Bake for 10-15mins until cookies are slightly firm (enough to lift off) They will firm up more after cooling.

5.) Let your cookies cool off, and enjoy! Store in your refrigerator. 

Notes: 

1.) You can make oat flour if you do not have it readily available – just put some oats in a food processor – you may need a little more oats to end up with what you need – the flour becomes more dense. (I.e. 1 cup of oats yields 3/4 cup of oat flour and 2 cups of oat flour yields about 1 1/2 cups of oat flour) 

2.) If your mixture is too dry, try adding a splash of plant milk or a spoonful of applesauce. If your mixture is to wet, try adding in a little bit more flour – Oat flour works best as it absorbs more.
