Healthy Vegan Caesar Salad

STOP BUYING STORE BAUGHT CAESAR DRESSING AND TRY THIS!!

Healthy Vegan Caesar Salad

Ingredients:

About 4 cups of Romaine lettuce (chopped)

2 Tablespoons of Plain/Original Hummus (oil free)

3 Tablespoons of Tahini 

1 small lemon or half a large lemon (2-3 Tbsp of fresh lemon juice) 

5 cloves of garlic (cooked) 

1 Teaspoon of Dijon Mustard 

1 Teaspoon of Agave 

2 Teaspoons of Capers, with their juices (Don’t drain the brine!) 

(*These are the perfect replacement for anchovies)

Freshly Ground Black Pepper – to taste

Red onion (optional)

Vegan Parmesan to top (optional)

Vegan grilled chicken (optional)

Croutons to top (If none, toast Ezekiel/whole grain bread, sprinkle on garlic powder and fresh cracked Black pepper, then chop into small bits) 

Instructions:

1.) Peel 5 garlic cloves and put them into a very small dish, covering them completely in filtered water. It’s ok if they float, just fill the dish. Microwave for 2mins until they’re completely soft. 

2.) Put the cooked gloves into your blender – don’t get rid of the water.

3.) Squeeze your lemon into the blender, zest a bit of the skin in (about 1/2 Tsp of zest)

4.) Add in your Tahini, hummus, agave, Dijon mustard, and capers. Add a couple cracks of black pepper if desired. 

5.) Blend your Caesar dressing. If too thick, add your water from your cooked garlic. If you run out, regular filtered water works too. Taste Adjust seasonings if needed. 

6.) Chop your Romain, and red onion. 

7.) In a large bowl, toss your Romain, red onion, vegan Parmesan, and vegan chicken until thoroughly coated. Top with croutons and enjoy!
