Quick & Easy Vegan Vanilla Yogurt

Most vegan yogurt recipes you come across take long and require lots of time and effort. This one does not. It is so quick and easy and tastes so good.

Equipment

  • Small Sauce Pan
  • Whisk

Ingredients
  

  • 1 Cup Plant Milk (I used almond)
  • 2 Tablespoons Corn Starch (Or arrowroot, tapioca starch, etc.)
  • 1 Teaspoon Vanilla Extract
  • 2 Tablespoons Maple Syrup or other Liquid Sweetener (i.e. coconut nectar, agave)

Instructions
 

  • Add all contents to a saucepan and whisk in the corn sarch until it's entirely dissolved. Do this before applying any heat.
  • Heat up the sauce pan to a high flame and whisk for about 7 mins until yogurt starts to foam up. 
  • Bring to a low simmer and continue to whisk for 2 more mins until you see a thick, yogurty texture. 
  • Turn off flame and let cool before transferring to a container. Cool in the fridge either overnight or for a few hours. Enjoy!

Notes

1.) Adjust flavor as you like. You can always omit the vanilla and sweetener to make a plain yogurt. You can add fruit, cacao powder, etc. Get as creative as you like. 
2.) It’s very important that before you put heat to the corn starch, to ensure it’s been properly mixed in first. Otherwise, you’ll end up with chunks of cornstarch in your yogurt. 
3.) Be sure not to under or overcook this. You don’t want to see any curdling and lumps. Once you achieve the consistency, stop cooking. 
4.) I like to use light colored liquid sweeteners since they don’t change the color of the yogurt much but it doesn’t really matter what you use as long as you’re happy with the taste and color. I haven’t tried powdered sugar or granulated sugar since I was afraid it would be grainy or too thick but I’m sure you can use it as long as you melt it right and add in more plant milk as needed. 
5.) Natural Separation can occur. Don’t let this freak you out, it’s totally natural. If you see this just stir or shake up the yogurt and you’re good to go.  
6.) If you’re looking for a more cultured yogurt taste, just add a squeeze of lemon juice. That will help bring some acidity to the yogurt that might be just what you’re looking for.

(Step 2) Whisking until foaming
Continue to whisk until you see this thick, yogurty, texture.
This should be your final product. Smooth, thick, silky, and creamy.
