Vegan Southwest Tortilla Soup

Vegan Southwest Tortilla Soup

Ingredients:

1 red onion
2 jalapeños, finely chopped
5 cloves of garlic minced
1 Tbs of Cumin
2 Tsp of Chili powder
2-3 Tsps of chili’s on Adobo (optional)
1 15 oz can of black beans
1 15 oz can of corn
1 15 oz can of fire roasted tomatoes
1 cup of split red lentils
32 oz of V8 or other brand of vegetable juice
1 13.5 oz can of full fat coconut milk
Fresh cracked Pepper
Juice from one lime (optional)
🌱 Cilantro for garnishing 🌱
🌱 Sliced jalapeños for garnishing 🌱
*Top with vegan sour cream & tortilla chips of your liking

Instructions:

Step 1.) Finely dice onion, jalapeños, and garlic, steam in a cup of the vegetable juice.
Step 2.) Once onion is translucent and jalapeños are softened, add everything else!
Step 3.) Let Simmer until everything is nice and warm and soft
Step 4.) Add all of your garnishing! 🌱
