Ingredients:
1 yellow or red onion (diced)
3 cloves of garlic (minced)
1 15 oz can green beans
1 15 oz can of corn
1 15 oz can of carrots
1 15 oz can of peas
1 15 oz can of diced potatoes
1 15 oz can of diced tomato’s with juices
2 15 oz cans of kidney beans
1 cup of fresh spinach
1 cup of chopped cauliflower
1 cup of chopped broccoli
SWEET basil for seasoning and garnishing (Emphasis on SWEET BASIL) this is the secret to flavor without salt
4 Tbs of tomato paste
4 cups of vegetable broth
2 cups of water – add more as needed
Instructions:
Step 1.) In a very large pot, add onion, garlic, and a cup of vegetable broth. Place a lid on top and cook until onion is translucent.
Step 2.) Add the rest of the ingredients, bring to a boil, and simmer until cauliflower and broccoli are soft.
Step 3.) Top with fresh chopped sweet basil
