Easy Healthy Vegan Stuffed Mushrooms 🍄
Ingredients:
16oz or 1lb of Baby Bella Mushrooms
4-5 Cloves of Garlic
1 Tbs of Fresh Chopped Parsley
2 Shallots
2-3 Tbs of Vegetable Broth
1 Dash of Black Pepper
Bread Crumbs (Optional)
Instructions:
Step 1.) Carefully remove the stems of the baby Bella mushrooms with a knife and set stems aside.
Step 2.) Chop Mushrooms stems and Parsley, then mince garlic and Shallots.
Step 3.) In a small frying pan, add 2-3 Tbs of vegetable broth, chopped mushroom stems, chopped parsley, minced garlic, and minced shallots.
Step 4.) Add a dash of black pepper and sauté on a medium heat until everything is nice and soft
Step 5.) Once everything is soft, on a small baking sheet with about 1-2 tbs of water or vegetable broth lay out the mushroom caps, and fill them with your stuffing. Sprinkle bread crumbs on top of each if desired.
Step 6.) Cover the pan with tin foil and bake at 350 degrees Fahrenheit for about 20 mins. Mushroom caps should be nice and soft.
TIP: If adding bread crumbs, you may want to uncover the foil after cooking, and THEN add the crumbs, and bake uncovered for another 5-10 mins to get the crumbs nice and golden and crispy.
