Healthy Cheesy Vegan Risotto with Broccoli 🥦
Ingredients:
1 Yellow Onion
3 Cloves of Garlic
1 cup of Arborio Rice
4 Cups of Vegetable Broth
3 Cups of Broccoli
For the Cheese Sauce:
3/4 Cup of Coconut Milk
3 Tbsp of Nutritional Yeast
2 Tbsp of Tapioca or Arrowroot Flour
1/2 Tsp of Onion Powder
1/4 Tsp of garlic powder
A pinch of Turmeric (Optional, for color)
Instructions:
1.) Put all of your cheese sauce ingredients into a pan. Do not cook yet. Just simply get the ingredients ready to be easily heated up on the stove.
2.) Chop your Onion, and mince your garlic.
3.) In a large, deep pan, add chopped onion and enough vegetable broth to sauté the onion in (about 1/2 cup) Add more as needed. Sauté until onion is a bit golden. While onion is cooking, chop your broccoli into bite sized pieces.
4.) Add your Arborio Rice, and about another cup of vegetable broth. Cook Rice until slightly golden in spots, scraping the brown from the bottom of the pan and adding vegetable broth as needed.
5.) Once the rice is browned, add your minced garlic and chopped broccoli.
6.) While your broccoli is softening, heat up your cheese sauce: As it starts to bubble a little bit, whisk it. Once heated up, and broccoli is nice and soft enough to eat, pour over your Risotto. Serve and enjoy 😊
