Healthy Chewy Vegan Oatmeal Cookies

Feeling Lazy? Throw it in a baking pan with some parchment paper and make a bake. Cut into bars or squares to grab on the go.

Healthy Vegan Oatmeal Cookies 

Ingredients:

2 Tablespoons of Neat egg (Chic-pea flour & chia seed powder) 

4 Tablespoons of water 

2 Tablespoon of Agave 

3 cups of whole grain oats

1 cup of raisins 

1 1/2 cups of Almond flour 

1 Teaspoon of baking powder 

1 1/2 Teaspoons of Cinnamon 

1 Tablespoon of organic vanilla extract 

2 Teaspoons of ground flaxseed 

1 cup of plant milk 

1 tablespoons of molasses or more agave 

1/2 cup of coconut sugar

Instructions

1.) Mix 2 tablespoons of neat egg with 4 tablespoons of water. Mix and create your binder. 

  • If you don’t have “neat egg” no worries there are many egg replacements! All neat egg is comprised of is chic pea flour and chia seed powder. Regardless, you want to compromise for 2 large eggs as a binder. 

2.) Mix all ingredients together. Some people choose add wet before dry, but in this recipe, as long as you created your binder first, it doesn’t make a difference. 

3.) Bake at 350 Degrees Fahrenheit (177 degrees Celsius) for 25 mins, flip 10-15 mins into baking.

NOTES

  • Even if you choose to put your mixture in a baking sheet lines with parchment paper and create breakfast bars or squares, it should still take about the same time too bake. 
  • For less sweet recipe, try 1/4 cup of coconut sugar, OR none, just adding more agave/molasses. Sweeten this to your liking. I generally only use 1/4 cup of coconut sugar but for most, the sweet spot seems to be at 1/2 cup.
