Healthy Creamy Vegan Fettuccine Alfredo
Ingredients
1 Cauliflower head
1 Head of Garlic
1 Cup of Vegetable Broth
½ Cup soy milk or other plant-based milk
1 Tbsp Vegan Butter (Optional)
1 lb Fettuccine
Instructions:
Step 1.) In a large pot, covered, roast one large head of Cauliflower with all the leaves removed carefully, and 1 head of garlic, in about a cup of vegetable broth for 30 mins at 350 degrees Fahrenheit checking to make sure cauliflower stays moist, and cook until completely softened.
Step 2.) While your Cauliflower and garlic are cooking or roasting, boil some water and start cooking your Fettuccine.
Step 3.) Remove Cauliflower and garlic from vegetable broth and in a blender, add the cooked Cauliflower, garlic, soy milk, and salt & pepper or garlic powder if desired.
Step 4.) Blend until smooth and creamy and pour over cooked Fettuccine.
* Add some of your veggie broth to the mix if it’s too thick to your desired liking.
