It’s so easy to make too, with only 4 ingredients!

Healthy Key Lime Parfait (Vegan and Keto Friendly)
This Healthy Key Lime Parfait made with avocados, limes, coconut milk, and agave. It's vegan, gluten free, oil free, nut free and keto friendly (if you're into that). It's smooth, fluffy, and packed with delicious key lime flavor, topped with crunchy granola.
Equipment
- 1 High Speed Blender
- 1 Zester (a cheese grater may work in a pinch)
Ingredients
- 2 Large Avocados Peeled & Pitted
- 1/2 Cup of Coconut Milk or more as needed (full fat!)
- 2 Limes Juiced and Zested
- 4-5 Tablespoons of Agave
- 1 Cup of Granola for topping
Instructions
- Place all ingredients into a blender except for granola. Blend until smooth.
- Serve in a small mousse cup and top with the granola of your juice. Chill in the refrigerator for an hour if warm from blending.
Notes
NOTES:
1.) This recipe makes 2 parfaits so if you’re just making for 1 cut everything in half. Your new measurements will be:
1 Large Avocado (Peeled & Pitted)
1/4 Cup of Coconut Milk (or more as needed) (full fat!)
1 Lime (Juiced and Zested)
2-3 Tablespoons of Agave
1 Cup of Granola (for topping)
2.) Be sure to zest all the green off your limes, this really gives it the flavor you’re looking for!
3.) If you’re having a hard time blending, very slowly add in coconut milk until your blender runs smoothly.
4.) Taste your mixture, add more sweetener if you need.
5.) If you choose to save the other parfait, make sure to wrap it tightly in plastic wrap and try to eat it within 48 hours, otherwise, it may oxidize and turn brown.
Pro Tip!
- Store your ripe (uncut) avocados underwater in a glass jar to make them stay ripe longer.
