Healthy Vegan Breaded Zucchini

Vegan Breaded Zucchini

Ingredients:

*2 large Zucchini
*About 1 cup of vegetable broth
*3 slices of whole grain or wheat toast
*1 tsp of garlic salt or powder (I used garlic salt)
*1 tsp of Italian Seasoning

Instructions:

1.) At 350 degrees Fahrenheit, bake 3-4 slices of whole grain or wheat toast for about 10 mins or until golden brown
2.) In a food processor, process the toast until it turns into fine crumbs
3.) Add 1 tsp of garlic salt or powder
4.) Add 1 tsp of Italian Seasoning, mix crumbs!
5.) Slice Zucchini into spears, then split the spears in half
6.) Dip the Zucchini into a bowl of the vegetable broth
7.) Coat the Zucchini with the bread crumbs you just made
8.) Bake at 350 degrees Fahrenheit for 25 mins

Serve with vegan ranch or other side. I thought these tasted best on their own!
