Breakfast Menu Healthy Vegan French Toast March 28, 2021, 2:45 pm September 11, 2021 Vegan French Toast & Berries for Two(Topped with Fresh Berries – Strawberries, blueberries, raspberries, and blackberries)Ingredients:Whole grain bread (4 slices)Almond milk or other plant milk (1 cup)Ground Flax seeds (1/2 tbs)Cinnamon (1 tsp)Vanilla extract (1 tsp)Corn starch (to make it crispier) (1/4 cup)*Coconut oil if desired/necessary to prevent stickingBerries for toppingAgave or maple syrup for toppingAlmond or coconut milk powder for topping. You can even use powdered erythritol. (Eliminate Agave to minimize sugar content/Added sugars) You may also choose to make a jam syrup by adding some of the berries to a blender, and adding a splash of water and agave if necessarySteps:1.) Mix all ingredients into a bowl with a whisk (besides toppings, bread, & oil)2.) Dip the bread into your mixture – Make sure you whisk right before you dip each slice because the corn starch settles quickly!3.) In a pan, fry for about 2-3 mins on each side on a med-low heat. You may need a little coconut oil in the pan if your bread wants to stick. I use oil on some occasions like this!4.) Add your favorite toppings!Enjoy 🙂
