Healthy Vegan German Potato Salad Soup

Ingredients:
About 2 lbs of Potato’s
1 Yellow Onion
4 Medium Sized Carrots
3 Celery Stalks
3 Cloves of Garlic
1 Teaspoon of Oregano
2 Teaspoons of white or white wine vinegar
4-5 Cups of Vegetable Broth
Fresh Parsley to Garnish
(Optional) Vegan Sausage Crumbles to Garnish
Special Equipment: Large lidded pot, hand blender, small pan-(for vegan sausage crumbles if desired)
Instructions:
1.) Peel Potatoes, and dice into small cubes
2.) Peel Carrots and dice into small cubes
3.) Chop Celery
4.) Peel and Mice Garlic Gloves
5.) Peel and Dice Onion to small cubes
6.) In a Large Pan, add all of your chopped vegetables, pour in vegetable broth, vinegar, and oregano, and cover.
7.) Simmer for about 20-30 mins on a medium-high heat.
8.) If you choose to add vegan sausage crumbles, cook now in a separate pan.
9.) Once everything has softened completely, scoop out a large bowl of the soup, and set aside.
10.) Using a hand blender, blend the soup that’s left in the pot, then return the bowl of unblended soup back to the pot as well.
11.) Chop Fresh Parsley and garnish your soup. Add vegan sausage crumbles on top if desired.
