Vegan Lentil Tacos
Ingredients:
1 yellow onion
1 green pepper
6 cloves of garlic
1/2 lb or about 227 grams of mushrooms brown or white (I use brown)
1 cup of cooked lentils
About 1/4 cup of vegetable broth
Whole grain or whole wheat tortillas
1 Tsp Onion Powder
1 Tsp Garlic Powder
1 Tbs of ground Cumin
Chopped Lettuce & tomato for topping
Cilantro for garnishing
*add grilled crumbles or beyond meat if desired
Instructions:
Step 1.) In a blender or food processor, blend mushrooms and HALF the lentils for about a couple seconds until mushrooms are a fine crumbly texture, set aside.
Step 2.) Finely dice onion & green pepper.
Step 3.) In a pan, heat vegetable broth and sauté onions and green pepper until onion is translucent and green pepper is softened.
Step 4.) Mince garlic, add mushroom blend and garlic to the pan
Step 5.) Add spices and cook for 5-10 minutes until your “meat” is ready.
Step 6.) While cooking, dice onion, tomato, cilantro, and other taco toppings desired
Step 7.) Roll your taco meat in a tortilla with lettuce, onion, tomato, cilantro, and hot sauce if desired.
