Did you know it takes pineapples 2-3 years to grow?
Pineapples can take anywhere from 32 to 46 months to completion and harvest. Just in case you didn’t already appreciate the pineapple
Here’s one way to enjoy it:
Pineapple Fried Rice
Ingredients:
1/2 Cup of Diced Pineapple
1 Large Onion
2 Cups of Arborio Rice or long grain rice (whichever you prefer, I used Arborio)
2 Cups of Vegetable Broth
5 Cloves of Garlic (minced)
1/2 Teaspoon of Fresh Ginger (minced or grated)
1 Tablespoon of Garlic Powder
3 Tablespoons of Tamari
1 Tablespoon of Coconut Aminos (or one more Tbs of Tamari)
1 Teaspoon of Curry Powder
1 16oz can of Tri-Colored beans (black, pinto, and kidney) (Rinsed!)
Black Pepper (to taste)
Toppings:
Fresh Parsley
Paprika
Tabasco (Optional)
Instructions:
1.) If serving from pineapple, cut a large pineapple in half, and slice out the insides. If not, cube up the pineapple as normal. Save 1/2 cup finely diced. Set aside.
2.) Dice 1 large onion, and add to a large pan with a splash of water or vegetable broth. Cook until translucent.
3.) While cooking, mince ginger & garlic, add to the pan with diced pineapple.
4.) Add Arborio rice and two cups of vegetable broth. (Can substitute with water)
5.) Cover your pan with a lid and simmer for a bit until rice is cooked thoroughly.
6.) Continue to cook your rice until slightly golden, splash filtered water in the pan as necessary to prevent rice from sticking. Use a wooden spoon to lift rice from the pan as you splash in water.
7.) Add all your seasonings, Tamari, coconut aminos, and adjust the spices as needed.
8.) Add rinsed beans, continue to cook for a few minutes until they are warmed up.
9.) Serve your pineapple fried rice in your pineapple bowl, and top with fresh parsley, a dash of paprika, black pepper, and whichever other toppings you prefer.
