Healthy Vegan Pot Pie Soup
Ingredients:
2 Onions
5 Cloves of garlic
4 Celery sticks (save and rinse some leaves for garnishing)
4 Large carrots
6 Large potato’s, diced (or 2 15 oz cans of sized potatoes)
6 Cups of vegetable broth
2 Cups of frozen peas
2 Cups of frozen corn
2 Cups of plant based milk (I used oat milk)
Fresh parsley for garnishing
2-3 Tsp of ground thyme
Black Pepper (to taste)
Instructions:
1.) Chop onion, celery, carrots, potatoes, and garlic.
2.) Add all ingredients to a pot and cook until vegetables are soft
3.) Garnish and enjoy!
TIP: To make this even simpler, you can use canned or frozen vegetables.
