Healthy Raw Vegan Pumpkin Pie Bites (Gluten Free)
This recipe is SO easy, SO healthy, SO tasty, and fulfills so many dietary needs. They’re Raw, vegan, gluten-free, can be made nut-free, and are very nutritious. This whole recipe can be whipped up very quickly as well. These raw vegan pumpkin pie bites taste like donut holes and are best served chilled as they get the best texture. They’re also very rich and fulfilling. You’ll be satisfied with just a couple. They’re also great little balls of protein. It’s a must-try when fall comes around!
Ingredients:
1/4 Cup + 1 Tablespoon of Coconut Flour (or as needed)
1/4 Cup of Pumpkin Puree
1/4 Cup of Tahini
1/4 Cup of Peanut or other nut/seed butter
1/4 Cup of Maple Syrup
1 Teaspoon of Pumpkin Pie Spice
1 Teaspoon of Alcohol-free Vanilla Extract (or Vanilla Bean Powder).
2 Tablespoons of Coconut Milk Powder or Powdered Sugar/Erythritol or (For Garnishing)
Instructions:
1.) Mix together all of the ingredients except for the coconut milk powder/powdered sugar.
2.) Line a small baking sheet with parchment paper. Roll dough into balls. (I made 12 balls, but you can make more or less depending on the size you want)
3.) Add your balls to the sheet, pop in the freezer for 1 hour.
4.) Remove from freezer, sprinkle on your coconut milk powder/powdered sugar and enjoy! Store in refrigerator and serve chilled.
NOTES:
1.) If you have a nut allergy, replace the nut butter with a seed butter such as sunflower seed butter or tahini.
2.) If you do not have coconut flour, feel free to replace with another flour, perhaps almond flour.
3.) Serve chilled, not frozen. When chilled in the refrigerator, they will get a more dense texture, like that of a donut hole.
4.) For the healthiest bites, replace the vanilla extract with vanilla bean powder or use an alcohol-free vanilla extract.
