My New Favorite Healthy Vegan Brownie Recipe
Dry Ingredients:
1/2 cup of cacao powder
1/4 cup of coconut flour
2 tablespoons of ground flax seed
1 1/2 teaspoons of baking powder
1/3 teaspoon of baking soda
Wet Ingredients:
1 cup of dates (about 8-9 large dates)
2 15oz cans of sweet peas (unsalted)(drained and rinsed)
1/3 cup of organic maple syrup
1/4 cup of coconut milk
Chocolate Glaze:
2 teaspoons of vanilla extract
3 1/2 tablespoons of cacao powder
1/4 cup of organic maple syrup
1 teaspoon of vanilla extract
1 tablespoon of water
Instructions:
1.) Whisk all dry ingredients into a bowl until there are no clumps. Preheat the oven to 390 degrees Fahrenheit
2.) In a food processor, blend all wet ingredients until you get a creamy paste. If it’s too runny, add a bit of coconut flour, if it’s too dry, add a splash of coconut milk.
3.) Add all wet ingredients to dry ingredient mixture, mix well.
4.) Line a 7×11 in baking pan with parchment paper.
5.) Bake in the oven for about 45mins. Times may very based on pan size and oven. They should be slightly firm and get more firm after refrigeration.
6.) Stir all chocolate glaze ingredients with a whisk. Pour and spread over brownies. Refrigerate when done. These taste better the next day 🙂
