Strawberry Cake Overnight Oats (Vegan and Gluten Free)
This Strawberry Cake Overnight Oats Recipe is very sweet with layers of creamy vanilla, fresh strawberries, and yellow cake crumble.
Ingredients
Cake Ingredients
- 1/2 Cup of Almond Flour
- 2-3 Tablespoons of Maple Syrup
Oat Ingredients
- 1 Cup of Oats
- 1 Tablespoon of Chia Seeds
- 1/2 Tablespoon of Ground Flax Seed
- 1/2 Cup of Diced Strawberries
- 1/3 Cup of Vegan Vanilla Yogurt Check out my quick and easy recipe below
- 2/3 Cup of Plant Milk I used almond
- 1 Tablespoon Maple Syrup Optional, for extra sweetness
- More Yogurt and a strawberry for topping
Instructions

- First make your cake crumble by combing cake ingredients. Set aside.
- Add all Oat ingredients to a bowl and combine well.
- Let your oats sit about 30mins to an hour for best texture. When ready, layer a cup or dish with your cake batter, some more vegan yogurt (if you want), then your oats.I topped mine with more yogurt, the leftover cake crumble, and a strawberry garnish. Enjoy!
Notes
1.) If you don’t have vegan vanilla yogurt, check out my quick and easy vegan vanilla yogurt recipe n.
2.) If you’re allergic to nuts, you could try using crushed graham crackers, shredded coconut, or leftover cake if you happen have some for the cake crumble. If you have neither, you can leave without, it’s still great!
3.) The chia seeds and ground flax are not necessary for this recipe, they’re just there for added nutrients.
4.) If you don’t have strawberries you can sub for another berry such as raspberries, blueberries, blackberries. You can also use pitted cherries.
5.) You can use frozen or fresh berries. If you use frozen, you may want to give them a little time to thaw. You can do this while your oats are sitting/soaking (step 3).
