The BEST Breakfast Potatoes

Ingredients:

1.) 2 Large Potatoes

2.) 1/2 Teaspoon of Paprika

3.) 1/2 Teaspoon of Garlic Powder

4.) 1/2 Teaspoon of Ground Thyme

5.) 1 Tablespoon of Olive Oil (Optional)

6.) Fresh Parsley and Thyme Sprigs for Garnishing (Optional)

Instructions:

1.) Cut and boil 2 large potatoes until a fork can easily go through them. Use a lid for faster boiling time.

2.) Strain the potatoes. On a baking sheet, add your potatoes, 1 tablespoon of olive oil, 1/2 teaspoon of paprika, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of ground thyme. Toss potatoes in oil and spices GENTLY to make sure that they are all coated.

3.) Bake your potatoes at 450 Degrees Fahrenheit for 15-20 minutes tossing halfway through.

4.) Top with fresh parsley and thyme sprigs and enjoy 😋

NOTES:

For an oil-free option, you can continue to monitor potatoes on an air frying tray/pan. You may need to turn more often being sure potatoes do not stick. The air frying pan works best as it does not allow the whole potato piece to stick to the pan because of the mesh holes.

Feel free to leave the skins on or peel them off. I only peeled mine here because they were starting to grow roots. I usually like to leave mine on.
