Ingredients:
Dry Ingredients:
1 Cup (90g) of oat flour
½ Cup (80g) brown rice flour
2 Tablespoons (16g) of corn starch or potato starch
⅓ Cup (70g) of Erythritol or sugar
1 ½ Teaspoons of Baking Powder
¼ Teaspoon of Baking Soda
½ Teaspoon of salt
Wet Cake Ingredients:
¾ Cup (180 ml) of any plant milk (i.e. coconut milk, almond milk, oat milk)
⅔ Cup (160g) of unsweetened applesauce
1 Tablespoon of Apple Cider Vinegar
1 Teaspoon of Vanilla Extract
Streusel Topping:
½ Cup (80g) of Rice Flour (or regular wheat flour)
½ Cup (60g) of Almond Flour
¼ Cup (40g) of coconut sugar or brown sugar
2 Tablespoons (28g) of any oil (coconut, grapeseed, canola, etc.) OR more liquid sweetener OR more applesauce.
2 Tablespoons of maple syrup, agave, or other liquid sweetener
2 Teaspoons of Cinnamon
Icing (Optional)
3 Tablespoons of Erythritol or powdered sugar
Splash of plant milk (I used coconut milk)
Instructions:
1.) Line a baking dish with parchment paper. [Mine was 16in by 9in (15cm by 23 cm)]
2.) Make the Streusel Topping. Add all dry streusel ingredients to a bowl, stir with a whisk, and add wet ingredients. Use your hands to combine the mixture until it’s nice and crumbly. Set aside, and preheat the oven to 350 Degrees Fahrenheit (180 degrees celsius).
3.) Add all dry cake ingredients into a large mixing bowl and stir with a whisk. Add wet ingredients, and stir with a whisk.
4.) Pour about half your batter into your lined baking dish, then half the streusel topping on top. Pour the remaining batter on top of that, then the rest of the streusel topping.
5.) Bake in the oven for about 35-40 mins, depending on the size of your dish and the oven it may be more or less time. In order to be certain it’s done, place a toothpick in the center. If it comes out almost clean, it’s done. It should be crumbly, but not wet.
6.) While baking, make your icing by adding all ingredients to a bowl, and whisk. Icing will be melty if it’s warm, so store in the refrigerator while you’re waiting for your cake to bake.
