This vegan chocolate mousse is not only incredibly tasty, it helps improve memory, focus, nerve health, creativity, and mood. It’s nut free, oil free, dairy free, and gluten free!

(SERVES 2)

SPECIAL EQUIPMENT: BLENDER

Ingredients: 

1 16oz package of silken tofu 

4-5 Tablespoons of Maple Syrup 

1/3 Cup Dairy Free Chocolate Chips (Melted) 

2 Teaspoons of cocoa powder 

2 Teaspoons of Lion’s Mane Powder (Optional)

Instructions

1.) Melt your chocolate. 

  • This step isn’t absolutely necessary, it just gives it optimal consistency. I’ve done without melting and it still turned out delicious. 

2.) Add all ingredients to a blender and blend. 

  • Before adding tofu, drain any excess water. No need to press. 

3.) Chill in the refrigerator for about 1 hour. 

4.) Top with whatever you like – shaved chocolate, fresh fruit, whipped cream, mint leaves, cocoa powder, etc! Enjoy  

NOTES:

1.) If you’re feeling lazy, you really don’t need to melt the chocolate before blending it to make this recipe tasty. This step isn’t absolutely necessary, it just gives it optimal consistency. I’ve done without melting and it still turned out delicious. 

2.) Lions Mane Powder is not necessary, I just put it in for added nutritional benefits. You can really use whatever superfood powder you like, or make this recipe without!

3.) You can substitute the maple syrup for another liquid sweetener such as agave or coconut nectar to name a couple. You can also use a couple dates and add a scoop of nut butter too if you like. Feel free to experiment. I’ve added a scoop of nut butter before just for added taste and it was pretty good.
