Shredded Cabbage & Carrot Soup 🥕
Ingredients:
1 small white cabbage
6 cups of vegetable broth
1 Yellow onion
3 cloves of garlic
3 celery stalks
4 long carrots
1 15 oz can of diced tomatoes (& their juices)
1 Tsp of oregano
1/2 tsp of cayenne
1 tbs of tomato paste (adjust as needed)
Instructions:
1.) Chop onion, celery, and mince garlic.
2.) In a large pot, add onion, celery garlic, and one to two cups of vegetable broth, simmer until onion is translucent
3.) While cooking take a vegetable peeler and shred cabbage.
4.) Add cabbage and the rest of the vegetable broth to the pan.
5.) Run your peeler all the way down your long carrots into the pan to create your “carrot noodles”
6.) Add diced tomatoes, tomato paste, and spices (adjust spices as needed)
7.) Cook until carrot noodles are completely softened
Tips: Save Celery leaves for garnishing
