Ingredients:
For the Dough:
2 cups (205g) of whole grain oats
1 cup (120g) of almond flour
1 cup of oat flour
1 mashed banana (Or 40g of applesauce)
1/4 cup of maple syrup or agave
1/4 cup of coconut milk or other plant milk
2 Tsp of baking powder
2 Teaspoons of Flaxseed (Optional)
For the Strawberry Filling:
3 cups (450g) of strawberries, diced finely
1/3 cup (105g) of maple syrup or agave
2-3 Teaspoons of Lemon or lime juice
5 Teaspoons of Chia Seeds
3 Teaspoons of potato or corn starch
Instructions:
1.) Preheat the oven to 360 Degrees Fahrenheit (180 Degrees Celsius)
2.) Put all strawberry filling ingredients in a saucepan, bring to a boil, and let simmer for
5-10 mins stirring occasionally.
3.) In a large bowl, mix dough ingredients by hand.
4.) Press about 2/3’s of the dough or a little more than half of it into a lines or greased baking dish. Mine measured 7 x 11 inches (18 x 28 cm. (A lengthier pan is better as you don’t want the filling too high).
5.) Pour the strawberry filling over the crust. Then crumble the remain dough on top.
6.) Bake in the oven for 20-25 mins.
