This lentil salad is lettuce-free meaning it will not go soggy after your dressing goes on so you can store it in the fridge with the dressing on it until you’re ready to eat.
This Tahini Dressing goes with so many different things and it’s so good, you want to drink it!
This lentil salad with oil free tahini dressing recipe is just a guide but feel free to use whatever ingredients you’re trying to get rid of. I used all the ingredients I had that were about to turn bad or had no intentions on using for anything else. I like to make it as colorful as possible
Lentil Salad with Oil Free Tahini Dressing
Ingredients
Tahini Dressing
- 1/4 Cup Tahini or more as needed
- 2 Teaspoons Maple Syrup
- 2 Tablespoons Fresh Lemon Juice Juice from Half a Large Lemon
- 2 Tablespoons Rice Vinegar
- 2-3 Tablespoons Water
- 2 Garlic Gloves Minced
- 1/4 Teaspoon Onion Powder
- 1/4 Teaspoon Cumin
- A Couple Cracks of Black Pepper
Lentil Salad
- 1 Large Cucumber or 1 cup (Diced)
- 1 Golden Beet Peeled & Diced
- 1 Bell Pepper Diced (any color)
- 1/2 Red Onion Diced
- 1 16 oz Can of Cooked Lentils Rinsed
- 1 Handful of Fresh Parsley Chopped
Additional Options/Substitutes
- *Diced Cherry Tomatoes
- *Diced Mango
- *Shredded Carrots
- *Diced Cabbage
Instructions
- Chop all veggies and add to a bowl.
- Make your Tahini Dressing by adding all ingredients to a jar and shaking well or by adding to a bowl and stirring. Adjust ingredients as needed.
- Pour your Tahini Dressing over your lentil salad, toss well, and enjoy.
