Equipment
- 1 Blender
Ingredients
- 1 Avocado
- 1 Can of Coconut Milk Chilled, or frozen into an ice cube tray
- 3-4 Tablespoons of Agave
- 1 Teaspoon of Peppermint Extract
- Splash of Plant Milk
- Handful of Ice
- A few spinach leaves for color See substitutions list
Instructions
- Blend all ingredients, adjust flavor as needed. If using frozen coconut milk, you can stop here, and enjoy.
- Pour shake into an ice cube tray, freeze.
- Blend your shamrock shake cubes with a splash of plant milk if needed. Enjoy your shake!
Notes
Substitutions:
Spinach leaves: You can use whatever greens, or green powders you like I just recommend they have a subtle flavor and bright green color. You could use baby kale, spirulina powder, or fresh mint. If using fresh mint, use before adding mint extract, you may need less. This way you can adjust as needed.
Plant milk: Use any kind really, the creamier the better.
Agave: You can use maple syrup or another liquid sweetener like coconut nectar, just make sure it’s clearer in color. I always recommend agave because it’s low glycemic.
Coconut Milk: I haven’t tried it, but perhaps a frozen banana or two and some extra plant milk will help make up for it.
TIPS/TROUBLESHOOTING
1.) If your shake is too thick, add more liquid, such as more plant milk.
2.) Avocados vary in size, so you may need to adjust the flavor as you like. If it’s not sweet enough, use more agave and if it’s not minty enough, add more mint extract.
3.) If your shake isn’t frosty enough, add more ice – IDEALLY, it is best to freeze the shake into and ice cube tray and then blend the cubes together. This will give you that frosty frozen texture while holding the flavor.
