Equipment

  • 1 Air Fryer or oven Air Fryer Preferred.

Ingredients

  • 2 Large Potatoes The Fries!
  • 2 Whole Baby Bella Mushrooms For Bacon
  • 1 Chili Pepper For Topping
  • Fresh Parsley For Topping

Mushroom Bacon Marinade

  • 2 Tablespoons of Liquid Aminos
  • 1.5 Tablespoons Maple Syrup/Agave
  • 1/2 Teaspoon of Liquid Smoke
  • 1/2 Teaspoon of Garlic Powder
  • 1/2 Teaspoon of Smoked Paprika
  • 1/4 Teaspoon Black Pepper

Spicy Aoili

  • 2-3 Tablespoons of Mayo
  • 2-3 Tablespoons of Hot Sauce until Mayo thins out

Instructions

  • Start by slicing your baby Bella mushrooms into slices. Not too thick and not to thin but better too thick than thin.. You want them about 1/4 inch thick. Just try to cut them evenly so they cook evenly.
  • Add mushrooms and all marinade ingredients to a jar, shake until we’ll combined, and let your mushroom bacon sit and marinate while you chop up some fries.
  • Chop up your potatoes into French fries. I start by cutting in half, then cut slices, then slice those slices once more to make fry shapes.
  • Lay your mushroom bacon slices out on a baking sheet lined with parchment paper. You can save the leftover marinade or toss but don’t pour it out on the baking sheet, that’ll only disrupt baking time and cooking evenly. It’ll burn up and won’t be good..
  • Air fry your mushrooms at 400 Degrees Fahrenheit for 10 minutes flipping halfway. If you don’t have an air fryer, they may take longer. Bake at the same Temperature but keep a VERY close eye on them.
  • Once those are done you can throw in your fries. I air fry these for about 12-13 mins at 450 Degrees Fahrenheit but times may very based on ovens or air fryers.
  • While waiting for your fries, start your spicy aioli by adding a couple tablespoons of Mayo to a small bowl, and adding in hot sauce until nice and thinned out. You should be able to easily drizzle your aioli.
  • Slice up your chili pepper and chop of some fresh parsley.
  • Once fries are done, drizzle with spicy aoili, then top with fresh parsley, chili pepper slices, then your mushroom bacon. Enjoy!

Notes

* If you don’t have mushrooms or like mushrooms, you can use something else in the same marinade to make bacon. Instead of mushrooms, you can use carrot ribbons, tempeh, etc.
* You can always make without the bacon, I’ve done it a few times and they still were great, the bacon just kicks it up a notch.
* If you don’t have chili peppers handy, Fresno peppers work great as well as jalapeños, cherry peppers etc! I think chili peppers taste the best!
* This dish is best made fresh. Fries can get soggy quickly after aioli is drizzled, so you can choose to keep your aoili in a dish and dip your fries in the aoili if you like your fries crispy and want to save them for later.
*If you do not have an air fryer, you can use an oven and keep the same temperatures, just keep an eye on the mushroom bacon and fries, they may take longer but are quick to burn.
* You can always have the mushrooms marinating ready to go, the longer they sit and soak up the delicious marinade the better.
