Add all ingredients to a pot, cover, bring to a boil.
Reduce to a medium heat and allow to simmer covered for 30 minutes to an hour, or untill apples are soft enough to mush and cinnamon stick has double in size.
Strain with a fine mesh strainer twice, then enjoy.
