Healthier Vegan Butterfingers (Quick and Easy Recipe)
A butterfinger is a crispety, crunchety, peanut-buttery chocolate covered bar of a candy flaky peanut-butter flavored filling that resembles peanut brittle. This recipe resembles exactly that and tastes exactly like, if not better than, a butterfinger. Best of all, it's quick, easy, and so much healthier!

- 1 Cup Organic Peanut Butter
- 1/2 Cup Organic Maple Syrup or Agave
- 2 Cups Organic Corn Flakes Not the unhealthy Kellogg's brand cereal, I recommend organic corn flakes. (Click link below to see the kind I buy)
- 1/2 Cup OR 125g Melted Organic Vegan Chocolate A small teaspoon of coconut oil melted with the chocolate helps smooth it out.
Add your peanut butter and maple syrup to a mixing bowl then mix well until combined.
In either a blender, food processor or with a plastic bag and a rolling pin, crush your corn flakes up finely.
Add your corn flakes to your mixing bowl and combine well. Then transfer your mixture to a lined baking pan.
Place your baking pan into the fridge for about an hour or freezer for about 10 mins until nice and stiff.
Once your mixture is stiff, cut it into bars, then melt chocolate and dip your bars into your chocolate. Allow chocolate to cool in the fridge and become hard. This should only take 5-10 minutes. Enjoy!
NOTES: Substitutions, allergies, etc.
1.) If you're allergic to nuts, you can always substitute the peanut butter for sunflower butter, it tastes just as great!
2.) Adding a small teaspoon of coconut oil to your chocolate before melting helps smooth it out butter. It's not necessary, but makes the chocolate much easier to work with.
3.) You can use Maple Syrup or Agave. I sometimes mix both because organic maple syrup can get pricey especially to use in larger quantities.
