Healthy Vegan Cheez It Crackers

A crunchy, salty (if you like), cheesy, healthy twist on a classic snack from my childhood.

Equipment

  • 1 Rolling Pin
  • 1 Medium sized mixing bowl
  • 1 Baking Sheet with parchment paper

Ingredients
  

  • 3/4 Cup of Chickpea flour
  • 1/4 Cup of Oat or Tapioca Flour
  • 4 Tablespoons of Nutritional Yeast
  • 3 Tablespoons of Tahini
  • 4-5 Tablespoons of Cold Water
  • 1/2 Teaspoon of Baking Powder
  • 1/2 Teaspoon of Garlic Powder
  • 1/2 Teaspoon of Onion Powder
  • 1/4 Teaspoon of Turmeric
  • Crack of Black Pepper to better absorb the turmeric
  • 1/8 Teaspoon of Paprika
  • 1 Teaspoon of Salt

Instructions
 

  • Preheat oven to 350 degrees. In a large mixing bowl, mix together all ingredients except for tahini and water.
  • Add tahini, and slowly add in cold water as you fold the dough together. You should get a sold sticky dough (but not too sticky to work with).
  • Place your dough between two pieces of parchment paper and roll your dough as flat as you can. The thinner the better.
  • Cut your flattened dough into small squares, then with a wooden rod or chopstick, poke holes in the middle.
  • Place your squares onto a piece of parchment paper and make sure they’re not sticking together. Sprinkle them with more flakey salt if you desire. Bake in the over for about 12-15 minutes until slightly golden. Your end product should be a cracker, that snaps in half.

Notes

1.) Do not skip poking holes in your crackers. The holes specifically act as little vents that allow steam to escape to during the baking process. This prevents the crackers from rising like other types of biscuits or breads. For texture and a thinner feeling consistency, you make take a fork and press the edges to make ridges if you desire.
2.) Baking times may very depending on your oven. Just check on the crackers, they should be slightly golden, and hard to the touch.
3.) You may omit some of the nutritional yeast for grated vegan cheese, or add your own spices if you desire. I try to keep the recipes as clean as possible.
