Vegan Chicken or Cooked Cauliflower

Instructions
Start boiling water in a large pot for pasta.
While waiting for your water to boil, peel and chop your potato, peel your garlic, and add it to a small pot with 1 and 1/4 Cup of Water. Simmer with a lid on until potatoes are tender (About 10 minutes).
Cook your pasta, then drain. Keep a lid over or let it sit in the water so it doesn’t dry out while you prepare your sauce.
If adding vegan chicken or cauliflower, toss it on now.
When your potatoes/garlic are tender, pour into a blender with all remaining ingredients, blend until smooth.
Pour your sauce over your pasta noodles, toss, add on vegan chicken or cauliflower, then top with fresh chopped celery leaves and bits of celery, with a drizzle of more hot sauce.
