1 Food Processor (DO NOT USE A BLENDER IF YOU DO NOT HAVE ONE - ALTERNATIVELY, CHOP ALL INGEDIENTS VERY FINELY)
Ingredients
16ozFresh Tomatoes
1Small Bunch of Cilantro
1/2Red Onion
1Large Jalapeño
1Mango
3-4Clovesof Garlic
1Teaspoonof Salt
Juice from 1 Lime
Optional Additions
Pineapple
Cucumber
Green Onion
Chile Pepper
Bell Pepper
Instructions
Peel your Onion, chop in half. Peel your garlic, and cut your mango.
Add all ingredients to a blender and pulse until desired consistency. Optionally top with more fresh cilantro.
Serve with sliced cucumbers, tortilla chips, or your favorite salsa pairing.

ALLERGIES:It’s very allergy friendly as it is gluten free, vegan, nut free, oil free, and soy free.Unfortunately this is not for those with a garlic or onion allergy. However, you may try using a substitution such as chives, asafoetida, green onion tops, or even leeks! I have not tried this, but it’s just a suggestion.SUBSTITUTIONS:You can use any kind of tomatoes, here I used romas as they were the cheapest in store but I’ve used grape tomatoes, romas, and beefsteak and this salsa has turned out great each time.If you do not have mango, pineapple may work - I recommend about 1/4 - 1/2 cup. I would use less as it’s much sweeter than mango.
